When Spring makes a Surprise Appearance!


We're slowly digging our way out of the snow and trust me its needed. This has been the longest winter we've had for awhile. Being  9 months pregnant, I've never looked forward to warmer weather so much. Tyler and I bought a new winter jacket trying to accommodate this ever growing baby of ours. Well needless to say we weren't anticipating snow in April. With an everlasting love for cacti and breakfast this springy brunch was exactly what Tyler and I needed. 

My mom use to make this recipe for my siblings and I; and it was always such a treat. Probably because trying to make waffles with three kids was like a never ending game of trying to keep up with the waffle production! Last year when Tyler and I got married we received a waffle iron at one of our showers, and its still on of my favorite gifts we got. Both of us having a huge love for breakfast food definitely helps that cause however. So with Mothers day quickly approaching, I hope you enjoy these yummy waffles as much as my family does! 




  • 1 egg yolk

  • 1c sour cream

  • 1/2 c milk

  • 3 tbsp butter melted

  • 1 cup flour

  • 2tsp sugar

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1 egg white, stiffly beaten.


Put all ingredients, except the egg white, in a large bowl. Mix til' smooth. By hand, fold in the egg whites. Pour 1/2 cup batter into the waffle iron. Proceed by cooking for 3-3 1/2 minutes.
